Clean and bright appearance with noticeable tears.  Aroma: Varietal, with notes of green fruit, citrus notes (grapefruit and lime), herbaceous notes (freshly cut grass, green pepper, and asparagus), and mineral notes.  Palate: Flavorful, fresh, and balanced on the palate.  Variety: Single varietal, 100% Sauvignon Blanc.  Production Notes:  The Sauvignon Blanc grapes are harvested in mid-September. The extraction of the must is carried out using pneumatic presses, thereby limiting the pressure at which the free-run juice is obtained. Once the impurities are removed from the must, fermentation begins with selected yeasts at a controlled temperature, not exceeding 17&#xBA;C. Bottling took place in early March 2021.  Tasting Notes:  Visually, it shows a yellow color. It has a clean and bright appearance with noticeable tears. The nose is dominated by varietal aromas, with notes of green fruit, citrus notes (grapefruit and lime), herbaceous notes (freshly cut grass, green pepper, and asparagus), and mineral notes. On the palate, it is flavorful, fresh, and balanced. Serve at a maximum temperature of 8&#xBA;C to enhance its organoleptic characteristics.
